Apple and Cinnamon Cake

Ingredients:

  • 1 green apple
  • Juice of ½ lemon
  • 1 dessert spoon of cinnamon powder
  • 2 large Fuji apples
  • 6 tablespoons brown sugar
  • ¾ cup (tea) of oil
  • ¼ cup (tea) of water
  • 2 cups (tea) of rice flour
  • 1 tablespoon of baking powder
  • 1 dessert spoon of baking soda
  • Demerara sugar with cinnamon for sprinkling
Preparation method:
Peel and chop the green apple (reserve the peel). Mix with the lemon and cinnamon and set aside.
In a blender, blend the seedless Fuji apples with the green apple peel, sugar, oil and water until smooth.
Pour over the flour with the yeast and bicarbonate and mix well.
Add the green apple and pour into a greased pan sprinkled with demerara sugar and cinnamon.
Bake in a preheated medium oven (180 °C) for about 40 minutes or until firm (do the toothpick test).
Unmold while warm and serve or let cool (if you prefer, drizzle with apple sauce, sugar and cinnamon or decorate with apple).
